The topping for these bars uses Rice Krispies and nuts. Any kind of nuts may be used, allowing for many different flavors. I use salted, roasted sunflower seeds in the bars in the photo.
The texture of the topping is much like pecan pie, so if you like pecan pie, you should like these.
Krispie Nut Bars
3 c. Holiday Cookie Mix
4 eggs, room temperature
1/2 t. salt (omit if using salted sun flower seeds or nuts)
1 1/2 c. brown sugar
2 t. vanilla (half almond extract if using almonds is good)
2 c. Rice Krispie cereal
1 c. chopped, roasted walnuts, pecans, slivered or sliced almonds, filberts or sunflower seeds
Stir cookie mix, measure and place in a 9x13-inch foil-lined pan. Press down into an even layer. Bake in a 350 degree oven 15 minutes or until lightly browned. Cool 5 minutes. Place eggs in a large mixing bowl and beat until thick and lemon colored. Add salt, brown sugar, vanilla and mix well. Stir in Rice Krispie cereal and nuts. Spread on baked crust. Be sure to stir well before spreading if mixture has been sitting for any length of time. The cereal and nuts will rise to the top causing the mixture to separate. Bake at 350 degrees for 25 to 30 minutes. Let cool and cut into bars. Makes 36 bars.
