In a large bowl, add
15 ounces of Pacific Food Pumpkin Puree
4 Eggs
1 cup Oil
2 cups Sugar
1/2 teaspoon Vanilla
Mix well.
In a separate bowl, mix
2 cups Flour
1 teaspoon Salt
2 teaspoons Cinnamon
1 teaspoon Baking Powder
2 teaspoons Baking Soda.
Mix wet and dry ingredients.
Fill a standard Cupcake/Muffin Pan about 2/3 of the way full.
Bake at 350 degrees for 30 to 40 minutes.
For the Frosting, you'll need
4 ounces Cream Cheese
1/2 stick of Butter
1/2 teaspoon Vanilla
2 cups Powdered Sugar
Mix well.
Now frost your cupcakes and try not to eat the whole batch!
