We are now in the second half of 2013's Christmas Treats hosted by Brenda from Meal Planning Magic.  I can't believe that we are this close to Christmas.  My sweet treat this week is Chocolate Streusel Bars.

I have mentioned before how much I like streusel; and, of course, I like chocolate, so what could be better than a layer of chocolate and nuts wedged between two layers of streusel?  Not much, I think.

This is an easy recipe.  You just make the streusel, pat half of it in the baking pan, melt the chips and milk together, pour over the base, add the other half of the streusel and bake.  The hardest part is waiting for the cookies to cool.

I make my own sweetened condensed milk most of the time, but if I am feeling lazy, I purchase it at the store.  A hint for those of you who live where there is a large Hispanic population.  Look in the Hispanic aisle for Nestle La Lechera.  It usually is less expensive than the Eagle Brand.

Although I used milk chocolate chips and sunflower seeds for the cookies in the photos, I consider this a basic recipe and have used other chip flavors and other nuts.  Some combinations I have made are butterscotch chips and pecans, white chocolate chips and almonds, peanut butter chips and peanuts, mint chips and walnuts.  You can mix and match till your heart is content.

The cookies tend to be a bit crumbly.  It is streusel after all.  When serving these on a cookie platter, I just shake them gently over the pan, before I add them to the platter.

The recipe is adapted from a Pillsbury Bake-Off recipe from many years ago.


Chocolate Streusel Bars
2 1/2 c. flour
2 c. quick rolled oats
1 1/2 c. brown sugar, firmly packed
1 t. soda
1/2 t. salt
1 c. soft butter or margarine
1/2 to 1 pkg. cooking chips, semi-sweet or other flavor
1 (14 oz.) can sweetened condensed milk
2 T. butter or margarine
1/2 t. salt
2 t. vanilla
1 c. chopped nuts of your choice (or sunflower seeds)

In a large mixer bowl, combine flour, oats, brown sugar, soda and salt.  Cut in butter until mixture is crumbly.  (I do this I with my electric mixer using the whisk attachment on low to medium speed.)  Pat  half (about 3 1/2 cups.) of the mixture into a foil-lined 10x15-inch baking pan, crumbling any large pieces of butter with your fingers.  Set remaining mixture aside.  In a medium saucepan combine cooking chips, sweetened condensed milk, butter and salt.  Heat, stirring constantly, until chips are melted.  Remove from heat and add vanilla and nuts.  Carefully pour chip mixture over the crumb crust spreading out from the center in an even layer.  Sprinkle reserved crumb mixture over the chocolate mixture, again crumbling any large pieces of butter with your fingers.  Pat crumbs mixture down firmly with the palm of you hand.  Bake at 350 degrees for 25 to 30 minutes, until golden brown.  Cool completely on a wire rack and cut into bars.  Makes about 48

Thanksgiving Party Etsy Shopping Guide


Halloween's over and here come the holidays.

Since I'm not doing my BIG craft show this year, I'm actually enjoying a little quiet  time before the holiday rush.  Drama Queen has her first real job working the Santa Express train in town and The Perfectionist is back doing the Christmas shows for his school encore group this year.  I know it's going to get busy and this is just the lull before the storm, but I'm enjoying it after a crazy October.

Without family nor our big group of friends being near by, Thanksgiving has become a quiet affair here.  It makes me sad, because Thanksgiving has always been a time for family and friends to get together with lots of laughter, games, and noise.  But I have a lot to be grateful for this year and will enjoy the time with my family before we all get lost in the holiday shuffle.

Since I'm sure there are many families out there who are suffering from small incomes in this darn economy, I'm kicking off the holiday with a Thanksgiving shopping guide from the small businesses of Etsy.  I hope you'll start your shopping with small businesses this year and support the families of America.

Maple Walnut Bars

Life outside of blogging has been happening at Grandma Loy’s Kitchen, so I am posting this Saturday Sweet on Sunday.

Last weekend hubby hit a rock while out four-wheeling and was thrown from his machine.  Fortunately he didn’t break any bones, but he has a gigantic bruise on his left side and one at the base of his spine.  He is very sore and can barely stand moving around so he has been pretty much planted in his recliner.  He has had two chiropractic treatments and is beginning to feel better, but I don’t like to spend lots of time on the computer when he is not feeling well.

This is the other maple-flavored recipe that I said I would post this week and is very different from the Glazed Maple Walnut Bars.  This one has a brown-sugar, shortbread-like base with a topping much like that for pecan pie.  You actually could use pecans instead of walnuts and have Maple Pecan Bars.

One thing that I do when I make this is to place the uncracked eggs in a bowl of very warm water while I am making the cookie base.  This warms the eggs up so that they are less likely to want to cook when the hot syrup is poured over them.

I always toast the walnuts as I think it enhances the flavor of the cookie.  This step can be skipped if desired.

This is a very rich cookie that goes well on a cookie tray.  The original recipe came from Farm Journal’s  “Best-Ever Cookies” book, 1980, one of my favorite cookie cookbooks.


Maple Walnut Bars
2 eggs
1 1/2 c. flour
1/4 c. brown sugar, packed
1/2 c. butter
2/3 c. brown sugar, packed
1 c. maple table syrup
1 t. maple extract
1/2 t. vanilla
2 T. flour
1/4 t. salt
1 c. chopped, toasted walnuts

Placed the uncracked eggs in a bowl of warm water and set aside.  Combine the flour and brown sugar in a mixing bowl.  Cut in the butter until the mixture is crumbly.  Press mixture into a foil-lined 9x13-inch baking pan.  Bake at 350 for 15 minutes.  While cookie base is baking, combine 2/3 c. brown sugar and maple table syrup in a medium saucepan.  Bring to a boil and cook 5 minutes.  Break eggs into a mixer bowl and beat slightly.  Slowly pour hot syrup into the eggs, beating constantly.  Stir in maple extract, vanilla, flour, and salt.  Mix thoroughly and pour over the baked base.  Sprinkle the walnuts evenly over the top.  Bake at 350 for 20 minutes or until lightly browned and set.  Cool in pan on rack.  Cut into bars.  Makes about 32.

Kids' Healthy Snacks - Nutritious yet Easy-to-Make Snacks for Growing Kids

Kids have many things going on in their lives. After school, they have their sport, their dance class, or other extracurricular activity that make them as busy as adults are. You can purchase yogurt flavored naturally with fruit, such as strawberry and blueberry, in order to balance the yogurt's natural sour taste.

Potato chips make for great afternoon snacks, but when consumed regularly, can potentially have negative effects on the body, particularly in a person's renal system. When too much sodium is consumed, it can lead to bloating or water retention, which is not safe for kids. To avoid these risks, make sure that any chips served during snack hour have small amounts of sodium, like popcorn. Popcorn utilizes oil and butter, but the salt content is very minimal. If you want to serve your kids healthier snacks than popcorn, why not create your own chips, such as tofu and sweet potato chips, and use an oven to bake them?

Chocolate bars and kids are always a perfect combination, but if you want a healthier alternative, make sure to provide snacks that can provide the same level of energy, without boosting their sugar levels. Granola bars are great alternatives to chocolate bars, especially if they are chocolate flavored. This is a creative way to incorporate the element of chocolate in healthier snacking alternatives.

When preparing or buying healthy snacks for kids, it is prudent to look for the freshness value and nutritional content. Read packages well, and if there are indications that consumption should be within 24 hours, follow the said instruction in order to maximize its nutritional value. Also, if there are specific directions pertaining to its storage or serving, similarly follow it to ensure freshness.

How to Get to the Blog Linky Party First and Get Your Blog Post Seen

Don't Be Late to the Linky Party! How to be First

I have to admit that I'm glad that Halloween is over.  I think it may be my favorite holiday of all the year, but it sure is nice to move to new crafting ideas and themes.  I think I may have a form of Crafting ADD in that I like to jump all over the place with trying new mediums and doing new ideas.  It's kind of hard to keep my brain focused, which is why I have structured my blog to concentrate on one theme from beginning to end.

I'm not sure it's the best blogging style since it seems that a lot of readers like to jump in to get ideas for whatever party theme they are working on and then run off to find more ideas or start creating projects.  I am totally fine with that, but it means I have to constantly work to get my new ideas out into cyberspace for readers and creaters to find.

Which is why I absolutely LOVE blog linky parties.  They are such a great way to pin new ideas, meet new friends, and get that blog post that I love out to where people can see it and remember it for when they need it.  If you are into blogging at all, you have seen these parties and read the posts on how to make your post stand out in the crowd.  You need to have good pictures, creative tag lines, and get to the party early enough to count.

While I am no expert at the first two, I have learned how to get to the party early and my page views have really benefited from that.  There are thousands of blog parties out there with each one on a different day and starting at a different time, so it's really important to be able to find a system that works to keep each blog linky straight so I can be the first to the party.  That took me some serious trial and error to figure out.

Add Linky Party Entry to Calendar

I finally found the LocalCalendar.com website.  (I am not an affiliate or anything, I just LOVE their service.) It is an easy web calendar that allows me to add each of my favorite blog linky parties.  I can add all kinds of information to the entry so that I can know the name of each party, where it links up, the day and time that it starts, and any other information that I want to add. 

I try to add little notes to the entry if the party has a specific theme or I put an astrix by the party name if it's a group linky party so I can remember to try and get there first.

Since I always have my phone with me, I attend a lot of blog parties on there.  So to help me, I always have two windows up in my phones browser.  One has my Blog Linky calendar  (I posted it on the "Linky Parties" page on my blog so I would always have access to it) and the other has my most current blog post.

This allows me to quickly access the calendar when I know a blog party is about to start.  I can bring up the page and click on the next linky party.  Since I already have my post qued up and ready to go, I can quickly jump into the party and add my blog post.

Sometimes, the blog owner doesn't have a set start time, will start the party early, or I haven't quite pinned down the exact start time yet, so I will try and look ahead an hour or two in the party calendar to check out the upcoming blogs when I'm standing in the grocery store line, waiting to pick up my kids, or just sitting at work during a quiet moment. 

This system has worked wonders for me in my party attendance, and my blog views.
