Cookie Making Made Easy my busy-Mom method

In the early 1970s, when I was very young and with small children to look after, I a few cookie recipes I would make very often, because they were simple recipes with ingredients I normally had at hand. Cookies are a great snack, do not require tools to pick and eat and can be made up for a party. However, even with all that, they are just not my favorite thing to do, because they must be carried out either by dropping individually on baking sheet, rolling and cutting (make a mess on the counter and more cleanup) or it's often fortified with the step to chill the dough before work. I immediacy. I want to mix a recipe, bake it, clean up and be done.

One morning I made a batch of these cookies, finally popped the last pan in the oven and set the timer. Itching to get outside for a bit and see what kids do, I went out ... and got distracted. When I remembered the cookies in the oven, they had burned and reduced to tiny little black hockey find pucks-not even dogs had any interest in them! It pays not to get distracted when baking. This was the last straw. I did think of a better way.

I came up with a brilliant idea that I call my "Busy-Mom method"; I use today. Instead of using the time to do all the individual cookies by parties, with separate baking times (and time to get distracted), I would roll the cookie dough directly onto a greased baking sheet, work it evenly to the edges and baking it as one large cookie. It is best to use a baking sheet that has three open sides, as it is simpler to maneuver the rolling pin and cookie rolled evenly. Also, remember that a little more flour in the dough may be necessary to lift it out and forms into a rough rectangle of rolling. A little extra flour over the surface while rolling also helps to keep the rolling pin from sticking. Try not to add any more flour than absolutely necessary, or the cookies will come out, closer and more difficult.

It takes a few minutes more in the oven with one big cookie, but it comes all the way out. Just look to the edges are golden and center must be specified. With these cookies make me a simple icing, which is just 1 ½ cups confectioners ' sugar, a pinch of salt, ½ teaspoon of vanilla and enough water or milk to make a fairly thick consistency (very slow to fall from the spoon). Spread over the warm cookie straight from the oven. Hot cookie heater icing making it MELT and spread easily, using the back of the same spoon I used to mix the icing. I am all for less cleanup! When the cookie cools, the finishing dryer and ensure better, and I cut the same cookie in small bore or square shapes, and such; cookies in half the time! Two of my favorite recipes for this method was Hermits and Simple vanilla Cookies. If you are a busy mom, try this method with some simple cookie dough. Hermit cookies had raisins in them, but the thickness of the dough was not less than the thickness of the raisins, so it still worked well.

Simple Vanilla Cookies

Makes about 7 dozen

1 cup unsalted butter

2/3 cup sugar

2 teaspoons vanilla extract

1 teaspoon salt

2 eggs

2 ¾ cups all-purpose flour

Cream butter, shortening and sugar. Add vanilla and salt. Add the eggs, one at a time, beating well after each. Stir in flour, mix well. Drop from a teaspoon 2 inches apart on a greased cookie sheet. Flatten with floured, flat bottomed glass. Bake in a 375 degree oven for 8-10 minutes. Remove immediately from pan.

These Simple vanilla Cookies are incredibly good, from a simple recipe. Do not take my word-try them, either as individual cookies, or with my "busy-mom method."

Roasted marshmallows and our meals

The marshmallow was toasted favorite in years. Children love to make smores and adults love to add them to the desserts as sweet potato pie. Regardless of your application, it is a fact that marshmallows have been around much longer than you might expect.

To start with is the marshmallow history very different indeed from what it is known for today. In ancient Egypt, it was used for both its pharmaceuticals and flavor qualities. Originally an extract of mallow marshmallow plant, which is known for its ability to relieve a sore throat. Mallow root was squeezed, releasing a substance that had several applications. Because the pharaohs were required to speak to large audiences, this often left them hoarse, in which case the mallow came in popular use.

The Greeks also put the plant to use, including the leaves as a judicial record to reduce the muscle aches, Burns, and even alleviate serious medical conditions such as bronchitis. But in these specific cases, they primarily relied upon the leaves to make a Marshmallow tea, rather than a sweet treat.

Since then, the marshmallow has undergone recipe changes and rarely include mallow extract in its composition. There are different recipes, many of which include gelatin, sugar, and vanilla extracts, which often varies depending on the manufacturer, but has become extremely popular in Asia.

Of the marshmallow popularity has grown so much that it even has its own dedicated vacation in Japan. In 1978, was as a response to those who made chocolate and sweets during Valentine's day 15 March designated as their national Marshmallow day to pay tribute to women in Japan.

Regardless of location, it is obvious that the marshmallow has been a symbolic sweet all the time, and have made a mark in the books of history. For this, it deserves recognition and honor that can only be expressed by enjoying a bowl that incorporate some toasted marshmallows. And while we may consider the only place a camping space preferred, we can always rely on our West Texas establishments to whip up a dish that brings this age-old favorite for tasty use.

As for those who enjoy Marshmallow here at home or the back Yard, we could really understand what it means to spend some time roasting a few candies together. Of course, it is not always about the sweetness of treats. It all comes down to experience, we share together.

Increase festivity with Red Velvet Cupcakes

I am finally getting up my first  Friday Finds for 2013, and I am so glad to be back.  I love sharing links to great recipes that have appeared on other bloggers' sites.  I always hope that my readers will visit at least one or two each week.

Jam Hands

Ali posted this recipe back in January, and I wrote a comment at that time saying I was going to include it in my Friday Finds that week.  I started a draft, but life and such happened so I sort of owe Ali an apology for not getting this up sooner.  I love the combination of bacon and green beans.  These use canned green beans which is what my hubby prefers, but Ali used frozen ones and cooked fresh ones could probably be used also.  I love this dressed up presentation. 

Bobbi's Kozy Kitchen

You all already know I have this penchant for loving recipes that take a perfectly healthy vegetable and adding some "not so healthy" ingredients.  Well here is another one.  If something is good with bacon, it is equally good with cheese.  It is a little late for fresh Brussels sprout this season, but I definitely will keep this one in mind for the fall.

This a great take on stuffed potatoes.  I would love this, hubby not so much.  With two veggies included this may be a little healthier than the two links shared above, but again there is that cheese.

Cherry Almond Dump Cake

 


Although I try to keep a batch of homemade cake mix on hand, I do buy commercial versions of flavors that are not easily replicated at home.  One of those flavors is Betty Crocker’s Cherry Chip Cake Mix.

Recently I combined a Cherry Chip cake mix with canned pie filling and almonds to make a version of the ever popular dump cake recipe.  This quick and easy dessert would make a nice addition to Easter dinner.  This recipe is also good made with half cherry pie filling and half apple pie filling.

I have found that a  half cup of melted butter does not completely cover the cake mix so I have started using from 3/4 to 1 cup.  I give the range in the recipe as I want to use just the amount necessary to completely cover the cake mix.  I start with 3/4 cup butter and melt an additional 1/4 cup, if necessary.

Cherry Almond Dump Cake
2 cans (21 oz.) cherry pie filling
1 t. almond extract
1 box (18 oz.) Cherry Chip Cake Mix
1/2 c. finely chopped slivered almonds
3/4 to 1 cup butter, melted

Place the cherry pie filling in a well greased 9x13-inch baking dish.  Stir in the almond extract and stir well.  In a medium bowl combine the cake mix and chopped almonds.  Sprinkle mixture over the pie filling, smoothing the top evenly.  Pour melted butter evenly over the top, completely covering the cake mix.  Tip the baking dish back and forth, if necessary, to help the butter cover the top.  Bake at 350 degrees for 35 to 40 minutes.  Good at room temperature with whipped topping or slightly warmed with a scoop of vanilla ice cream.  Makes 12 to 15 servings.

Carrot Cake Fudge

Fudge is one of my favorite treats of ALL TIME.  Every year for Christmas it's the one thing that Dear Hubby makes for me alone.  I don't have to share it with anyone.  It's my favorite Christmas present.


Lately, I've been feeling a little adventurous and have been collecting Fudge recipes to try.  You can see them on my Fudge Pinterest board.  So when I found this Carrot Cake fudge by Inside BruCrew Life, I knew I had to try it.  (Did I mention that Carrot Cake was one of the few other treats that I am ever tempted by?)

Let me tell you that this one is a real winner!  I have already packaged it up and it's ready for the Easter Bunny to bring to MY basket this year.  It will probably be my new Easter tradition and favorite Easter treat.

Both the Hindu gods are among the most respected and most popular gods in Hinduism. They worshipped in almost all Hindu homes and remembered in times of need as well as trial version. ' Hey Ram ' and ' Radhe Krishna ' are two of the most common phrases, one can hear in religious Hindu homes.

Children look eagerly forward to Chhoti Diwali when the flow of donations to and fro from friends and relatives turns into a torrent, since only a day back to Diwali. Gluten free baking-a trip to the new forest

Gluten-free foods are their in the world these days. We all become more aware of gluten, gluten intolerance, Celiac (or coeliac) disease and what it means for so many people. While I am not gluten intolerant, I often cooking and baking for functions, locally. Last year, I was asked to give a little treat for a princess party can put on at the Dacotah Prairie Museum. Accompanied by a "Queen", were little girls from tots to teenagers invited, to learn about the lives of real Princesses. They were taught how to detect properly, and curtsey.

Little girls hear the word "Princess" and go dreamy-eyed. The program was sold out. I made lots of little treats, but found out one of the small Princesses and her queen was gluten intolerant and could not drink of many of the little treats. This was an intolerable mode! I decided I need to learn more about this disease, be aware of what was involved, and to provide alternatives that would be tasty and exciting.

In the past year, I have try different gluten-free flour mixes and makes lots of goodies, mainly from my own normal recipes will be converted by simply replacing the gluten free flour and add the xanthan gum. In large, they have been an entire success. In my honest opinion, as a person in the 42 years baking some of the cakes, turn the fruit or nuts bread more moist and tender than when made with wheat flour; a very happy discovery, no doubt. Mix together the chopped nuts, 2 teaspoons sugar and cinnamon. Sprinkle ½ of the topping to the greased pan. Put in half-raising agents-requires this "plopping" small spoonfuls of raising agents in the pan, as raising agents is very thick. Then carefully smooth to fill in any holes. Tapping the pan on the counter help. Pour on the rest of the "topping" and again add spoonfuls of pan till all the raising agents used.

Bake for 1 hour or until a knife inserted in the Center comes out clean. Allow to cool on a rack for 10 minutes before removing from pan. Powdered sugar shake over cake, if desired. Serves 12 to 16.

GLUTEN FREE option: replace the flour with your favorite gluten free flour mixture and add in 1 teaspoon xanthan gum. Mix and bake as directed. (Sometimes the baking is a little longer than normal, but because of the texture and moistness is so fantastic, I can wait a few more minutes!)

Yarn Maze Easter Basket Hunt

On Easter morning last year, I was laying in bed feeling like a bit of a Failure Mom.  I had gotten up and filled the kids' Easter baskets and then laid back in bed and waited for them to wake up.  I had some fun Easter baskets, but we hadn't done anything fun that year.  No dying eggs.  No Easter hunts.  Nothing.

But inspiration hit while I was laying there.  


I got up and grabbed 4 different colors of yarn.  I started at Mini Me's doorknob and tied one end of the yarn.  (I had to make sure it was loose enough that he could get out without too much trouble.)

Then, I wound the yarn around everywhere in the living room, kitchen, dinning room, bathrooms--everywhere upstairs.  At the end of the string, I tied his Easter basket and hid it behind the piano.

I took the next color and tied it around Daredevil's door knob and did the same thing.
Then I repeated that for the older two.

When the kids all woke up, they were amazed at the maze.  They had a blast following their colors around the house to find their Easter baskets.  I think they had more fun finding their basket than what I put inside them.

It was a COMPLETE success and I went from Loser Mom to Mom of the Year.

Mom of the Year will be back again this year and maybe this time, we'll expand the maze to the whole house!  None of us can wait for the fun to begin.

Invert the baked cake onto a cooling rack or plate and continue with cooling. Dust the cake with finely powdered sugar or drizzle some chocolate or caramel sauce over the top.

Felt Easter Bunny Candy Pocket

I'm pretty sure I have told you before that my husband and I met when I was only 12 years old.  We've known each other a LONG time.  It took a "few" years for me to come around to his way of thinking and become more than friends, but sometimes I wonder if our moms knew that one day it would happen.

Years ago, Dear Hubby's mom gave me a cute Easter Bunny bag filled with sweet treats.  At the time, I wasn't much of a crafter but I thought it was the neatest thing so I've been toting it around with me through the years.


This year, I decided to recreate the bunny for my kids.  (But I'm certainly NOT giving it to any of their "crushes", I've seen where that leads!)

I started by making a bunny head template out of card stock.  You can use mine if you want.

Then I cut it out of white felt.  I used colored yarn (a different color for each kid) and a running stitch to stitch up the ears and sides of the face.  I didn't stitch between the ears to allow for the candy.

Next I cut a white pipe cleaner into thirds for the whiskers and used 2 white pom poms and a slightly smaller orange pom pom to make the mouth.

Finally, I filled it with Hershey kisses.  If you want, you can tie the ears into a soft knot to secure the candy, but I haven't had any trouble with it falling out.

Hawaiian-Style Vegetables-Improv Cooking Challenge




Today is the day to post our recipes for this month’s Improv Cooking Challenge hosted by Kristen over at Frugal Antics of a Harried Homemaker.  (Note, Kristen’s is in the process of changing servers so I will be back with a link as soon as I know the blog is back up.)

The ingredients Kristen chose this month were peas and carrots, a pretty common combination.  I chose to go a somewhat traditional route with these, but used snow peas in my recipe.

Many, many years ago Birdseye made a frozen vegetable and pineapple combination called Hawaiian Vegetables.  It had carrots, green peppers, onions, water chestnuts and pineapple with little cubes of frozen sauce that melted and glazed the vegetables as they cooked.  Although I don’t really like green peppers, I did love this particular dish.

I decided this was a good time to try to replicate that recipe.  The only brand I can find that makes 8-oz. cans of pineapple tidbits is Dole.  Pineapple chunks may be used, but they will need to be quartered.  They carrots need to be very thinly sliced, no thicker than the snow peas.  I like to slice them on the diagonal.  Since I didn't use them, I have listed the water chestnuts as optional.


Hawaiian-Style Vegetables
1 can (8 oz.) pineapple tidbits in their own juice
1 T. butter
2 t. brown sugar
1 c. very thinly sliced carrots
1/2 c. finely chopped onion
1 c. snow peas
1/2 to 3/4 c. very thinly sliced red pepper (I used about 1/4 of a very large pepper)
1/8 t. salt
1/3 c. thinly sliced canned water chestnuts
1 T. cornstarch
1/3 c. water

Drain pineapple, reserving juice (there should be about 1/3 c.)  Melt butter in a 1 1/2-qt. saucepan and add brown sugar.  Stir in carrots, onion,  and snow peas.  Cook, uncovered, over medium heat 4 minutes, stirring often.  Add red pepper, pineapple juice and salt.  Cover and simmer for 5 minutes, stirring often.  Add reserved pineapple chunks and water chestnuts, if using.  Cook about 1 minutes longer until vegetables are not quite as tender as you like.  Add cornstarch to water and mix well.  Add to vegetable mixture, stirring constantly.  Cook over medium heat until sauce is clear, thickened, and boiling.  Remove from heat, turn into a serving bowl and serve immediately.  Makes 4 servings.

My kids want to give their teachers gifts for EVERY holiday.  And while I totally appreciate all their teachers do for them and would love to be able to go all out showing my support, I find it a bit expensive to come up with gifts all the time.  Plus, do their teachers REALLY want so many nic nacs and apples?

Probably not.


But who can turn down chocolate?  And a fun, artsy, "card" from my kids at the same time?
Totally WIN-WIN for both of us.

So I created these coloring page Hershey candy bar wrappers for my kids to give out for the Easter holiday.

I started by making these coloring pages in a size that would fit a regular 1.5 ounce Hershey candy bar.  I made two different designs and then printed them out on regular white paper.
